I'll enjoy trying all of the first 9 in the near future. But #10 will always hold a soft spot in my heart (3 slices per sammy, with ketchup on the side).

/But they missed the obvious--mozzarella. Made them more than once with it and never regretted it.

Get a waffle iron that makes Belgian waffles. Make the grilled cheese in that. So much tasty, toasty, browned goodness....

I typically do a couple thin slices of ham, swiss, sauerkraut (homemade, not that limp crap in a jar) and hot mustard. Just put the swiss cheese on top and bottom and it all melts in together.

This is the only one you ever need for grilled cheese, used to be called Old English. Best is open-faced, broil it till it's golden-brown on top, but closed face is fine too.

I'm more of a fan of a really sharp cheddar myself. Something about that bite that just tastes so good for a grilled cheese.

I'm using cheddar slices now, which are barely cheese (but way more cheese than american).

Basically, I got a new set of knives (razor sharp knives vs the cheapie serrated blades that I had before).

And well, can anyone recommend a good cheese knife because with the cheapie ones I could slice through cheddar by applying some force (they split the cheese open rather than cut it), but with my razor sharp knives, applying force doesn't seem very prudent as they cut so cleanly that the friction from the cheese means it takes even more force to cut through.

IE, I'm afraid I'm going to slice off a finger with the damn things.

At work we did a flatbread with bleu cheese and pears. Strongly recommended.

A month is not enough to try all the variations of the wonderfood "grilled cheese".

That said, American is the ultimate, and the butter to everything-else ratio should be about 2:1.
