first time i had a goat cheese pizza, i thought i'd died and gone to heaven. it was in queens [ny]. the guy made his own cheese, had a goat out back.

Not at all. Heated it to 180F, stirred in about 1/4 cup of lemon juice, then strained through cheesecloth and let hang for a while. Added salt and herbs as noted above.
