So why exactly did Han refer to the Jedi as a "hokey religion" and lightsabers as "ancient weapons" when the Jedi (and their lightsabers) were a pretty mainstream thing just 20 or so years ago?

The man has been around the galaxy several times. He has to know a Jedi Knight when he sees one and probably knows about the Jedi Purge as well. If anything, he should be getting nervous that the kid and the old man he had to run from 2 star destroyers with, are now in his cargo hold practicing something that the Empire considers "shoot on sight" traitorous. I mean, smuggling spice is one thing, but these guys are the equivalent of Al Queda.

Then, upon arrival, he finds that their destination planet has been entirely blown up?

The only reason that Kenobi was able to shoot Grievous in the heart with that blaster was because Grievous isn't force sensitive. Luke had his lightsaber what... 5 days when he learned to block blaster shots with it?

/mostly though it's just aesthetic I think. Lore and cannon notwithstanding.
