The one take-away, though, is that if you're given an option of "resign or be fired" you ALWAYS take the "be fired" part. If you quit, you get no severance, no unemployment and have no recourse if you want to file a discrimination lawsuit later. If you're fired, most states will allow you unemployment unless you REALLY fark up and there's a good chance that your company will give you at least some severance to dissuade you from filing a suit against them.

The cost of living is drastically lower, but the pay here is still absolute shiat even taking that into account. Oklahoma pay is terrible in practically every field.

Firing / resigning seems a bit harsh to me. Reassign him, demote him, suspend him. But he wasn't targeting a particular person with his comment - for which he tried to make amends - and it was all-American hetero in nature.
