The differences? The actors are largely unpaid (at least as first) and there are no re-takes. This is delivered to the audience as somehow being more genuine, as if there are real stakes or lack of control involved. Instead it's just TV with more amateur actors, looser scripts and less editing.

So, it's a TV show with the lower quality marketed as being "more real".
