Great. I just love being able to read the internet archives on glossy paper while waiting for my doctor.

As a retired chef, It amazes me anyone, including thsoe fat, sausages like Rachael Ray, can make a living, let alone build an empire off of a glossy, mostly ads, recipie magazine. (It's only to give the ladies something to read in the crapper, I know)
but once you take all the ads out, you're left with two types of recipies:
Fun, Easy, Meals and snacks you can make with your kids, for your kids, that your kids will enjoy.
and
Meals that look good, that you will try, because we told you it was low fat, bu you're just going to steal another box of girlscout cookies from one of your daughters and eat it in the bathroom crying because you gained so much weight having so many kids because you thought it would fulfill your life, but it didn't. It made you fat. Now try this half a boneless, skinn\less porkchop with a side of lo-fat applesauce, you farking cow.

Seriously. What about buying raws foods and learing the basics, and stop drooling over food porn?

Oh, god, I think I'm a food hipster.

I've foraged for berries for jam making for years now. It's great fun.

I've also (very carefully) gone mushroom hunting.

Gluten free foods generally suck ass though.

Off grid street vendors brings to mind a case of food poisoning from some non-compliant roach coach, not a cart opening a brick and mortar location.

I'm half grateful, half annoyed at all the gluten-free food. On one hand, I have celiacs and so it's getting easier and easier to make a dinner for the whole family that the whole family will actually enjoy. On the other hand, it's also getting easier and easier to go into a grocery store and walk out with over $100 worth of "gluten-free" junk food so I can eat gf girl-scout cookie-clones in the bathroom while I cry about what a fat cow I'm becoming again :P

There is no motivation to control yourself like the motivation to avoid crippling pain. *sighs*

About three weeks ago, I switched to a vegan diet.

I have to say, I kinda like it. I'm learning to cook a lot of new things, and I'm shedding weight faster than I possibly imagined.

All I care about on that list are macarons. As it is now, the sandeich cookie is highly underrated in North America, and these things put Oreos to shame. I just hope the trend pushes down the price of macarons - or causes people here to start making them bigger. Here's to hoping these things become as big as cupcakes have been in the last year or two.

I feel for you, because you have a lot of people jumping on the gluten-free bandwagon that are helping make the food more available, but are also making life difficult for actual suffers by making the uniformed believe you are faking it and can eat gluten just fine, you're just a sheep following a trend.

Has a friend that has celiac. He despises the gluten free trend while at the same time being thankful for it. He just wants a dark beer again, something I am trying to achieve with my homebrewing, but have no idea how to mimic one.

My wife has celiac disease and has to eat gluten free. What a huge pain in the ass. Luckily I'm not one of those people who sympathizes and joins in her suffering.

Really? I know a guy who runs a restaurant. He's gone out and caught crabs himself (to use in the dishes he sells), but told me that's against the local code down here. I mean, he knew he wouldn't get caught, and he didn't advertise that he foraged the crabs himself. Just saying...

Even the people who are supposed to be presenting a more 'cook your own, use natural ingredients' are turning food into a convoluted farking mess.

Here is what food is...

Picture your body like a car, this tube within a tube that we are. It requires fuels and fluids to run, and requires the right kinds. The best way to manage your car is to put the right type of fuels and fluids in, and plan to get as close to empty before you stop to fuel up again. Never fill up, always put in small amounts and stop for fuel and fluids 5-6 times a day, and never after six pm.

Everything after that runs to gluttony, food masturbation, overselling of shiat products that can be easily had/made at home cheaper and healthier.

Work your car a decent amount once or twice per day, fuel as listed above and avoid being fat, and or turning food into something beyond a means to an end.

So does it piss you off when people claim they have to eat Gluten-free, but are really only doing it as an excuse to be on a diet? I have a friend like this. She suddenly claims she can't eat any gluten and that is partially why she is fat, but if you ask her if she has celiacs she always avoids the questions. She hasn't lost any weight because, as you pointed out, she buys the pre-packaged junk food instead of healthy snacks. She seems to use the gluten thing whenever anyone talks about dieting. "Well I need to eat gluten-free and have for a few months and feel GREAT! *pauses for someone to say how great she is looking/awkward silence*"

I waffle between want to try that and paleo.

I would probably go more veggie than pure vegan though. The constant caring wether something has any animal product is crap.

I feel bad for people that are gluten intolerant, but to go seek it when you're not is down right crazy. Plus, to avoid sweet breads is also crazy. Really? You'll put a mcnugget in your body, but not some tasty head cheese?

I just found out I'm Celiac, and my Wife left a bag of pizza buns on the counter. You could have filled an olympic sized swimming pool form all the tears I cried.

I got curious and looked up the whole gluten-free thing yesterday. Apparently, in addition to the people with medical reasons to avoid it, it's trendy to avoid gluten, but no one really knows why. Gluten is a protein, so it's not a fat or calorie thing... and it's not an animal product... so.... I couldn't find any explanation - just some stuff that talked about how trendy it is.

Most gluten free breads etc are total crap though, I don't know why people would willingly eat that crap if they had a choice, ah well.

Well, now you're being more specific example than just 'foraged ingredients'. I won't argue that ALL foraged ingredients are legal, but there are plenty of things which appear seasonally on restaurant menus which aren't farmed. Ramps (wild leeks) come to mind. Certain kinds of wild mushrooms, particularly in the Pacific Northwest. My guess is there's less regulation on plants than on animal products.

All good. I don't know the full regulations. As well, I'm sure its determined city-to-city or state-to-state.

I'm sure also, like liquor distributorship, there's a lot of bureaucracy enacted as protectionism for certain companies.

There's a vendor at one of the farmer's markets in Albuquerque that did a gluten free breakfast burrito. It was very tasty. Nuclear hot too, which was a plus.

I should have caveated that with 'if you work a typical 9-5 and into bed by 9-10. If you're working out right before, excellent. If you run a late day and will be up later than 10-11, then that's good too. For most people the metabolism begins to slow done after 6pm both due to natural cycle, and from learned behavior. For most people just not eating after 6 is a safer bet than doing so.

All are stupid except restaurant gardens, those rock. One of the local hotels brought in a great chef and one of the first things he did was transformed the open air atrium into a garden. Fresh product is probably the most important ingredient in great food and it's hard to get fresher than right beside the restaurant.

Are they still around? I'm not so interested in gluten free as I am nuclear hot. That's always a plus. I like to avoid places that seem to be big here for quanity (Wecks/Vics Daily) and go for quality.

And the one's that trick themselves into buying the magazine because of all the Kid's recipies in here, and are in denial about being fat. They never noticed that they went from a Bikini to a Onepiece as soon as the first was born. They never noticed their victoria's secret underwear gradually morphed into widepaneled, holey, geannypanties after kid #2 popped out. They never noticed how many snack boxes they were loading into the cart after #3 stlithered out of the tax bracket machine that they themselves hid on the top shelf, away from the kids, because mommy needs a little "me time" with her entire box of Little Debbie lipsmackers.

Since when does "off-grid" mean getting a brick and mortar restaurant?

I thought off-grid meant either 1) disappearing completely or 2) going solar/wind powered etc. so that you have no carbon footprint/aren't connected to the electrical grid. A brick and mortar restaurant is more "on the grid" than a food truck is.

I have celiac disease. Quite frankly I'm thankful that eating gluten free is trendy...it makes getting gluten free foods all that much easier for me. 6 months ago most grocery stores didn't carry much -- now even our local pizza shop is doing gluten free crusts. It's awesome, really.

I can eat bacon if it's nitrate free (Hempler's Black Pepper bacon, yes please!)but white bread is like poison to me. I had a deluxe from Dick's in Seattle a few days ago and woke up @$AM sweating and feeling like someone was stabbing me in the gut with a knife.
Gluten free is a big adjustment.
