I always thought cooking the veggies helped break down cellulose and cell walls, thereby making more of the nutrients available to your body. Did they study the actualy nutritional benefits (hard to do) for humans, or just do some lab tests to test for the presence of these various substances? Because I didn't read anything about that in the article. I say bullshiat.

I call Bad Science Reporting, which may or may not include the Reporting of Bad Science as well as Reporting Science Badly.

"Cooked" vegetables? By whose standards? The British? If you cook everything to mush then loss of vitamins is expected, regardless of the technique. No reporting of the criteria for determining "cooked".

And how much water were they using? Cook a bean in a bathtub and you'll lose more nutients than if you use minimal water. No indication of that either.

Allzo, some plants lock their flavonoidy goodness up and it all ends up in your poo unless you cook them first (the veggies, not the poopies), so some foods (tomaters, in particular) have less bioavailable nutrients when raw.

Otta be a law - you can't report about a science experiment without publishing the protocols.

All the study said was that boiling and microwaving reduced the antioxidant content. Boo hoo. No one knows how much antioxidants you should take, too many is just as bad as not taking any, and foods are not standardized. Your body actually needs oxidation reactions (big surprise.) Of course, these simple facts would lower sales of worthless dietary supplements.
