We saw an ad for the Perfect Cupcake Pan. It allowed you to stick candy or fruit in the middle as it cooks. My girlfriend doesn't believe it'll work as planned. I believe it was designed by men of science and thus should work.

You can do cupcakes out of just about any plain old cake recipe, you just have to adjust the cooking time and keep an eye on it.

Now, the real magic happens when you fill them. There's a recipe my sister has for this hard fudgey icing that usually gets poured over a yellow sheet cake. But when it's cupcake time, she hollows out most of the cupcake and pours that icing on the top, so you get a little bit of yellow cupcake and a farkton of divine chocolate fudgey goodness.

I'm not sure why we even bother with the cake, but we do.

A neat trick is to bury a little balloon in the cupcake batter as you pour them into the molds. When someone bits into one - Pop! they get cake and icing splattered all over their face.

I know these sound weird, but they are extremely tasty (especially the frosting):

Lavender-Honey Cupcakes

Ingredients

1/2 cup butter
2 eggs
1-3/4 cups all-purpose flour
1-1/2 teaspoons baking powder
2 teaspoons dried lavender
1/2 teaspoon salt
1 cup sugar
1/4 cup honey
1 teaspoon vanilla
2/3 cup milk
1 recipe Honey Frosting
Dried lavender (optional)

Directions

1. Allow butter and eggs to stand at room temperature for 30 minutes.
Meanwhile, line forty-eight 1-3/4-inch muffin cups or eighteen 2-
1/2-inch muffin cups with paper bake cups. In a medium bowl combine
flour, baking powder, the 2 teaspoons lavender, and the salt. Set
aside.

2. Preheat oven to 350 degrees F. In a large mixing bowl beat butter
with an electric mixer on medium to high speed for 30 seconds. Add
sugar, honey, and vanilla; beat until combined. Add eggs, one at a
time, beating well after each addition. Alternately add flour mixture
and milk to butter mixture, beating on low speed after each addition
just until mixture is combined.

3. Spoon batter into prepared muffin cups, filling each about
three-fourths full. Use the back of a spoon to smooth out batter in
cups.

4. Bake for 10 to 12 minutes for 1-3/4-inch cupcakes (or 16 to 18
minutes for 2-1/2-inch cupcakes) or until a toothpick inserted in
centers comes out clean. Cool cupcakes in muffin cups on wire racks
for 10 minutes. Remove cupcakes from muffin cups. Cool completely on
wire racks.

5. Pipe or spread with Honey Frosting. If desired, sprinkle with
additional lavender. Makes 48 (1-3/4-inch) or 18 (2-1/2-inch)
cupcakes.

Honey Frosting: Allow half of an 8-ounce package mascarpone cheese or
cream cheese and 2 tablespoons butter to stand at room temperature for
30 minutes. In a large mixing bowl beat mascarpone or cream cheese,
butter, 3 tablespoons honey, and 1/2 teaspoon vanilla with an electric
mixer on medium speed until light and fluffy. Gradually add 1 cup
powdered sugar, beating well. Gradually beat in 1-1/2 to 2 cups
additional powdered sugar until frosting reaches a piping or spreading
consistency. Makes about 1-2/3 cups.

For easy filled cupcakes:
Take your favorite cake mix and prepare, filling lined muffin cups 2/3 full

In a separate bowl, take 1 package of softened cream cheese, 1 egg, and 1/3 cup of sugar, blend until smooth (will be thick). Mix in a little vanilla and 1/2 cup of mini/regular chocolate chips.

Using a small cookie scoop or spoon, take about a tablespoon of the cream cheese mixture and drop it right in the batter-filled muffin cups. The cake will bake around the cream cheese mixture, but it's not absorbed into the cake

You can also play with the filling a bit, like omitting the chocolate chips and using raspberry or orange extract. The filling isn't light and airy, but it's really good.

I don't know how cupcakes would survive a trip overseas, though (or if they even ship). Their red velvet and orange creamsicle cupcakes are my personal favorites.

I make rum cupcakes with cake mix and instant pudding mix. I then make a glaze out of straight rum, sugar and butter and just have the cupcakes sit in it for at minimum 8 hours.

The recipe is everywhere. It just gets a little tricky when baking it in cupcake and not bunt cake form.

I don't have the recipe, but some of the best damn cupcakes I ever had we're cilantro with orange buttercreme frosting. They were divine.

I think the women that made them was called saavy lamb? It was something lamb. She also made a mean peanut butter bacon cupcake.

I hope it gives you some ideas
