You can't honestly fall that far in such a short time...they were either not inspecting the joint properly before, or got mad because the owner cut off their free meals or something. Restaurant cleanliness is all about process and habit. A place that's been in business that long doesn't just suddenly go to shiat.

This is generally why big food corporations like Walmart and target have internal 'quality assurance' health inspectors.

Not only do they get visited by the state, they also have a contracted third party company. Basically what that really amounts to is less lawsuits and state health inspectors being less zealous because they know somebody else also checks it too.

That being said, when you hire someone to find something wrong, they're supposed to find something wrong. I've worked at a restaurant where the inspector said he couldn't find anything wrong. But he wrote us up for having a few dirty corners because 'He had to so his boss knew he was doing his job.'
Bogus write up. But he had to, He was just doing his job!

Also the guy sounds like a prick. Generally speaking, health inspectors I've met want to help your business. Usually for the most part it's just oversights. They realize it and point it out. Usually only new hires are the ones giving a string of write ups.

My grandfather was a health inspector 50 years ago. He told us stories about how the guys would give him steaks so he would give them a good review.

This was my first thought, but then I realized that the rest of the article was missing. Something doesn't add up. This owner should have an inkling as to why he's being singled-out. He mentions nothing about it. When two different inspectors nail your ass to the wall, at least one of them received some really bad service or something. Also, it sounds like the inspector was already writing a lot of violations. So, to say that he wrote a lot of violations because he was being recorded is invalid.

The real losers here are the employees. I'd like to hear from at least a couple of them.

If you can show me a 100% clean restaurant and I'll give you $1000. Especially when they come in during prep hours when the kitchen is least clean.

If a place has a history of low points/violations, the high points are suspect. The reverse is true too. I have a nasty Chinese place behind our apt building that got an A, after getting Grade Pending (which means they are appealing a non-A) and then a B (which means that appeal was for a C). Now they are back to Grade Pending. They are a C on a good day, in my eyes.

I wouldn't say that. Two years ago, a local pizza-chain had opened a new location with a brand-new building, and they got a 50 on their Boobies-opening inspection because everything was already falling apart.

Owning a business my self, we have inspectors come in once in a while. It all depends on the inspector. We can have a regular, veteran inspector come in, take a look around to make sure there are no major violations, write down a few minor things , and call it a day. Then, once in a while, we get these fairly new people who think they are going somewhere in their job, spend hours there writing down every tiny detail on absurd "violations". One example: Wrong colored extension cord. Really? Who gives a fark?

They are rather storm trooper-ish in NYC. One time I was sitting outside of this small coffee shop on their outside bench, having some coffee next to the sandwich board on the sidewalk that advertised their specials and stuff,
and oliver sudden half a dozen city health-ordinances-zoning-whatever guys descended upon the place like a swarm of bees.

Within seconds there was this guy on his knees next to me measuring the bottom of the sandwich board and quickly jumping up to write a ticket declaring to the bewildered owner, who had now stepped outside, that he would be ticketed, as it was three inches too far into the street.

I just got up and walked away before the guy decided to stick a thermostat in my coffee to check the temperature.

A public worker doing his public job on a public salary in a public place should have no expectation of privacy. If the violations that he claims are true, then good job under the glare of public scrutiny, and you should get a raise for being steadfast in a difficult position.

On the other hand, if you are trying to dick with people because they annoy you, then I hope the unblinking gaze of a camera sends you to the private sector.

I always take pictures of violations when possible.

I've worked with some shiesty kitchen managers in my time. One night my reach in cooler froze over, I turned it off to thaw out and asked the km to turn it back on before he leaves. I even wrote a huge sign "turn me on before you leave." The next morning (after a hot Aug. night) I opened with him. I opened it, and was almost knocked out by the funk. Steaks, pork tenderloin, salmon, lamb chops, prawns etc... were bad. I lambasted him for it. I always iced my proteins down at the end of the night. He feels around and says, "just throw the stuff away on the top." I told him years later that day when he wasn't looking I tossed everything, and if he noticed his food cost jump a few points that month? He was pissed, but I didn't care. I don't eat out much, because I know the almighty food cost is held in higher regard to quality of food.

A friend of mine is a real estate inspector. When he provides an inspection report, it includes not only descriptions of violations, but detailed photographs of those violations.

In this day and age, why aren't health department inspectors toting around a digital camera to record violations?

A photographic record would go a long way toward settling any disputes. I would think ;)

I worked with a Chinese lady who refused to eat at Chinese restaurants. You see, she worked at one as a teenager and they habitually scooped the fried rice off of plates and 're-cooked' it.

This is in no way an indictment of any culture or peoples though.

Are you serious? Of course a restaurant can legitimately fall below code in a short period of time. New manager, lack of business, rodent infestation, etc...

But I'm sure you're right, its municipal corruption.

Not defending this situation either way, but absolutely you can. Its not often the owner who makes sure things are cool. Maybe night cook in charge of clean up quit, and they hired a guy who's lazy about it.

I know a lot of people in the food industry, and I've absolutely seen a restaurant that's been in business for 30-ish years go to shiat in 6 months. Cleanliness often goes down hill with it.
