You know, when the doctor told me I needed to start eating better to control the blood pressure and cholesterol, I looked into all these faux meat products to replace what I had been eating (Bacon, sausage and the like)

After about a month, I realized eating the fake crap just reminded me how awesome the real stuff tasted and made me want it even more. So I just gave up eating bacon, sausage and other fatty meats for about two years.

I've got all the numbers to where the doctor wants them to be these days, and I'll treat myself to the delicious, fatty real meat products I love about 6 times a year.

Much better than eating any of the crappy "healthier" versions out there, in my opinion.

Eh... I just go with a well-rounded diet of lean meats, whole grains, fresh veggies, fruits and nuts mostly.

Not a huge fan of tofu, though, I do love it in hot and sour soup.

I think most people in the west dislike tofu because they've never had it cooked the way it was meant to, and instead associated tofu with the crappy fake meats that vegans and vegetarians seem to eat. Properly cooked, it's great.

This. Tofu on its own is kinda bland and squishy. It takes on the flavor of what it's being cooked with, so if you do it right it's quite tasty. However, it's not meant to be eaten with everything, nor is it meant to be a substitute for anything at all. I can make a delicious stir-fry with tofu and it comes out just fine, but it didn't fare as well when I tried it in curry. (I was out of chicken and wanted to see how it'd hold up. Not bad, but not something I'd try again.)

I like tofu, but I've found that shredded seitan is my favorite in stir-frys and tacos. When I'm in the mood for protein without the fat that is, otherwise I use a delicious meat-tasting substance called meat.

I dunno. The Soyrizo they sell at TJ's is about as bad for you as a lean-"ish" pork chorizo in terms of fat. Though all of the fat is soy/oil based so slightly healthier, but still has way more than 1/2 of its calories from fat. Instead I have the meat counter at the "real" grocery store make me up some pork chorizo made from lean cuts.

Tofu that's been processed to seem like faux meat: Ewww, not a fan. (If you're going to be vegetarian, be honest about it. Besides, it's not like there's not cultures that have had fairly well-debugged ovo-lacto-vegetarian diets or anything...)

(And yes, I specify ovo-lacto-vegetarian because, well, pure veganism isn't sustainable in pre-industrial societies and even in the industrial period hasn't been around long enough to be properly "debugged". I'll save the "why veganism isn't environmentally sustainable" argument for later, though. Suffice it to say that the religious group that comes closest to ethical eating across domains and kingdoms of life (the Jains) consider consumption of milk and eggs to be ethical as long as the critters involved are cared for humanely.)

Tofu prepared in its own right, as a soy-based flavour sponge and/or cheese substitute (rather than meat substitute): Actually quite yummy and good. :D (I'm meh on most vegan "meat substitutes" but I DO like me some Buddhist's Delight, for instance; the latter actually prepares tofu as a distinct foodstuff with its own flavour profile and isn't trying to be anything besides tofu.)

Of course, it's always been a bit puzzling over why tofu was used as a meat substitute, as tofu is arguably soy-milk cheese (even undergoing a similar process of bacteria-mediated curdling); the concept of "soy sausage", for one, makes about as much sense to me as, say, the concept of "cottage cheese sausage" or sausage made entirely of feta cheese. (Yes, it's possible. No, I can't see it as being really all that good compared to the non-sausaged product.)

Similarly (CSB time), my brother sometimes eats frozen "spanakopita" made by Amy's, and of course it contains a ton of tofu. Hmmm...

For me, rice is the designated filler food that takes on the flavor of what it's being cooked with.

Tofu is just a tagalong for me. Yeah, it will get eaten, but only after the chicken/beef/pork that's also on the plate.

Freeze tofu before using it. It makes the texture more palatable. Less squishy and slimy.

Tofu makes a decent substitute for paneer, in that they both have a similar texture and have a mild flavor/rely on taking in other flavors. I've had good luck making curries that normally take paneer with tofu.

I'm not familiar with paneer. *Quick wiki check.*

That sounds kinda tasty. Will hafta look for that when I'm back in civilization and when I have the time to mess around with recipes. Cool!

(Also, FWIW, I make Japanese-style curry, but one of these days I really do intend to branch into making Indian-style. Again, when I have time to mess with new recipes.)

We did not evolve binocular vision and tracking skills to hunt broccoli.

Mammilian herbivores have long digestive tracts to break down plants, we have short tracts, like carnivores. Meat calories are what allowed the human brain to develop its current size and function.

No wonder vegetarians are brain damaged.

One of the current favorite theories is that it was a weakening of our jaw muscles and the ability to pre-digest our food via cooking which allowed the skull to expand. The existing great apes still have a power jaw anchored with muscles that go to the cranial ridge preventing the cranium and brain from growing larger.
