The technology generates electricity by turning shredded paper into sugar which in turn is used as fuel.

That's kind of cool, but fusion it isn't.

Sony's engineers are not the only ones exploring the concept of paper-based batteries.

In 2009 a team of Stanford University scientists revealed they were working on a battery created by coating sheets of paper with ink made of carbon nanotubes and silver nanowires. They said their work might ultimately lead to a device capable of lasting through 40,000 charge-discharge cycles.

JEEZ "science" writers. This "battery" appears to be a fuel cell in which paper is a chemical component that winds up being oxidized. The Stanford effort is actually a battery in which paper is a STRUCTURAL component.

And why was the DeLorean powered by Mr. Fusion at the end of Back to the Future (Doc Brown dumps a half-drunk beer can into the DeLorean to power it then), but in Back to the Future III, the DeLorean goes back to being a gasoline powered car that can't fly?

Presumably the flight gear is also gas-powered. And converting hydrocarbons is beyond my abilities; I assume the for the 1885 frontier town where Doc was trapped.

Before Marty went back, he didn't have the parts to rebuild the time circuits - and he'd already made his peace with staying in that time period, so he didn't have a thought to making his own gasoline. When Marty arrived, they only had ~five days or a week before Doc would get shot. Of course, you might point out they might have longer if Doc just holed up and avoided Tannen until everything was ready, but that would have been risky (more risky than trying alternatives, like a too-powerful alcohol for a fuel, to get up to speed).

That said, I don't know how long it would take to convert kerosene into a gasoline substitute, though I'm pretty sure the second first thing they tried destroyed some part that would take Doc 'a month to rebuild.'

Why try to convert kerosene to gasoline? Gasoline was a natural byproduct of many hydrocarbon cracking methods in use at the time. In fact, the first gasoline pump was put into service in September of 1885 (hand powered, and only stored one barrels worth). Doc Brown could have gotten his gasoline from the same place the town store got their kerosene.

There was another simple solution in BTTF 3. When Marty goes back to rescue Doc, there are actually two Deloreans present. The one Marty traveled back in, and the same one Doc hid in the cave to be discovered in 1955. All they had to do was syphon some gas from that one, and then leave it there as he did before.
