Sugar (or high fructose corn syrup or other sweetener) seems to be in damn near everything that's even slightly processed. For instance, go and look at the sliced bread being sold and see if you can find any without any sugar in it. WTF do we need sugar in bread?

I don't believe so, but I suppose it's possible. Even if you use sugar, you really don't need much. And you can easily replace it with honey. The yeast will eat the sugars in the flours. Maybe adding sugar speeds up the process and leads to more gas in fermentation, making the bread lighter.

I'll have to check it in my cooking science book "What Einstein Told His Cook." Cool read if you're looking for an interesting Christmas present.

We make our own bread and don't use sugar or sweetener of any kind. So is it for reasons of taste or to promote shelf life? I'm actually asking why we need sugar or sweetener. Do you have an answer or do you prefer smug rejoinders instead?

He's from Bern, but mother is originally from the Zurich area and father was German. Escandalo!!! (Well, it was back in the sixties to marry someone from Germany. You know, the whole WWII thing). :P

Depends on what kind of bread your making to be honest.

If you want a hard, dense loaf, by all means don't add any sugar... The yeast wont have any food, and will make very few bubbles.

If you want a lighter, fluffier bread, add some sugar or honey and you will get a lighter loaf.

I like a nice balance between a dense bread, but soft enough to cut nicely, so I blend my own bread flour out of whole wheat flour, and gold medallion bread flour. I also tend to use honey instead of sugar, but you only really need a little to make your bread a bit softer.

Also... WTH??? Have you NEVER made bread?

My hubby does. But he doesn't use any sugar or honey. Then again, the bread is a lot harder, but he's used to it as that's how they prefer bread in Switzerland.

Oh, for sure. I've given up trying to completely avoid that kind of stuff. I try to eat healthy, but sometimes I crave something processed and it's going to have that stuff in it.

Agh... so he makes rustic, old world bread. Guess that makes since.

I use honey (About a teaspoon full) for two large loaves, just to get it to rise better... It's not like Im putting two cups of sugar in like the store bought stuff :/

I eat all the damn sugar and fat and lard I want and it doesn't hurt me. Black pudding with lingonberries (SUUUUUUGAAAARRRR) on top, with white bread toast (dude it's a block of sugar, when that starch hits your tongue it turns right to sugary sweet stuff!) with a glob of real butter (not Land-o-Lakes), eggs, bacon, and tang or fresh squeezed orange juice (both sugar bombs).

And then I bicycle the 7 miles to work in 45 minutes or less.

Then I search for more food energy...

Do you know what would happen if we made kids bicycle to school if they were closer than 3 miles? Take a guess. No bus service, you bike that sheiß. At 10mph average it's 18 minutes; at 15mph its's 12 minutes.

after you're done stating the very obvious, try looking at the sugar content on many "adult" "healthy" cereals as well. you may be surprised (or maybe not) to find that a great number of them have almost as much sugar as many of the kid cereals.

i do frequently eat the adult cereals...and while i do search for the better (healthier) alternatives, i do not even try to fool myself into thinking they are superior in the sugar department. besides, to paraphrase the old saying..."a spoonful of sugar makes the high fiber whole grains and nuts easier to swallow". seriously, twigs and ruffage don't always taste all that great without some sugar.

I'm partial towards Froot Loops or Trix... I know that they are crap... but I try to do as much exercise to eat whatever I want...

/key word is "try"...
