What you'll need
Access to hot running water
1 towel
1 gallon plastic bag
10 peeled oranges
1 can fruit cocktail
1.25 cups sugar
6 ts ketchup
16 oz water

Add oranges and fruit cocktail to bag and mash into a pulp
Add 16 oz water to the bag and seal tight
Put bag in sink and heat with hot running water for 15 minutes
Wrap bag in a towel to help keep it warm. Store bag somewhere safe for 48 hours (you may need to open the bag a few times during the 48 hrs to allow gasses to escape)
After 48 hours add sugar and ketchup, mix well and place under hot running water for 30 minutes
Wrap bag in towel and keep there for 72 hours, venting periodically to prevent explosion of the bag
Enjoy!

Damn fine beer, definitely my favorite recipe I've conjured up so far.

Taken directly from a homebrewing book (I don't have it on me, I forget the title, but it has two female authors--great read). This has been my best received brew to date. Then again, I love sour beers (Kasteel Rouge is my all-time favorite).

Pomegranate Tart:
Specialty Grain Bill:

12oz 60 lovibond belgian caramunich
0.5oz carafa III (huskless debittered black malt)

Malt Source
2lbs dry light extract
2lbs dry wheat extract

Hopping Schedule
0.5oz Saaz Hops

Special Ingredients
1 tablet Whirlfloc (clarifier)
1lb pomegranate molasses
1 gallon pomegranate juice

Yeast
1 tube White Labs WLP400 Belgian Wit

Priming Sugar
4 oz corn sugar

-note, pomegranate molasses can be found in most gourmet or Indian food stores. It's pomegranate juice reduced to a syrup Do not use regular molasses as a substitute. Also, pure juice only, not concentrate and no preservatives.
Also note- any American, English, or Belgian yeast would work fine, but the yeast on the recipe above has nice spicy, tart qualities.

Yeast: WLP 3068 Weihenstephan

Specialty grain:
4 oz. Munich Malt

Extract:
1 lb. Extra Light DME
5 lb. Wheat DME

Hops: Hallertau for 60 mins @ 3%AA (~.5oz)


My favorite hefeweizen! So simple and so delicious, its always a hit at parties.

1oz German Spalt (45 mins)
1oz German Spalt (3 mins)

Yeast
German Ale XL

Needs another week to ferment, then into the bottles. No idea how its going to come out

/I've been pretty happy with the Mr. Beer kits, believe it or not. They make some pretty good beer

Krimson, when I took 'Public Speaking' in college, we had to give a demonstration speech. I did mine on how to make pruno.

I wanna make a clone of Papago's Orange Blossom Wheat, but with a saison base. Gotta get off my ass and get into homebrewing one of these days.

14 lbs honey
1 tsp. gypsum (optional: compensates for hard water)
2 tbsp. Irish moss (protein skimming)
4 gallons water
Champagne yeast

Mix honey and 2 gal hot water in large pot. Add gypsum and Irish moss. Bring to a boil, stirring frequently. Hold at the boil for approx. 1 hour, skimming and discarding foam and Irish moss. Transfer to 5 gal. carboy; add 2 gallons cold water, and cover. After 8 hours, mix champagne yeast with 1 c warm (100°F) water; let stand 15 minutes, then add to contents of large bottle, close with fermentation lock. Let stand until fermentation ends (2-6 months depending on how fresh the honey is). Bottle.

One heck of a good mead, if I do say so myself.

Variant: Add 1/4c grated ginger with the honey, and juice of 2 lemons as you transfer it int the large bottle. Ginger mead...

Turbo yeast + sugar + a fractioning still that can be reconfigured to run as a pot still.
