I have a part time job in retail. I don't say Merry Christmas to customers until the week of Christmas UNLESS they tell me this is their last time they will be in the store until after Christmas. My job is very customer-focused. I don't just run a cash register, I do a lot of assisting in selection. If I'm going to see you again, I say nothing holiday specific. If I know you are Jewish or if you are wearing a Star of David, I will tell you Happy Hannukah. Otherwise, nothing until the week of Christmas. By then, we are all wishing everyone Merry Christmas. It's not store policy; it's just how it's done. I'd be sick as shiat of saying Merry Christmas to hundreds of people every day for a month. And they'd be sick of it, too.
