The article (the real one on instructables.com, not this intermediate blog link) discusses both of those points. Use lead-free plumbing solder (duh) and don't worry too much about the copper.

It's the Bugatti of one cup coffee makers. For those who like their kitchen gadgets to be outrageously expensive and red.

No, but seriously. I have one of those cheap Italian espresso percolators you can get for as little as $20. They work just fine. Makes a nice strong cup of coffee even if you replace some of the bean with sugar to save time and the washing of a coffee spoon. Six cups of espresso makes about two cups of regular coffee, and who drinks just one espresso any way?

If you want something a bit fancier, they have single-cup machines for about a tenth of the price of the grand monster above, and if you're not satisfied with the Bugatti of coffee makers, a real espresso machine will only set you back the price of a small house in the country. It'll have brass eagles and everything and it'll make a noise like a really big bath tub draining---scoooootch! For a bit more, you can rent an old Italian to operate it.

it might be worth building if i can match the weight of the press i take backpacking.

(it's basically a miniature chimney-type billycan with a little extra plumbing.

solder for copper pipes has not contained lead for decades. if you use solder that clearly states it is for electronics only.. your loss. and copper poisoning from this would take a loooooong time. quit your worrying chicken little.

and it's getting hard to come by the 50/50 lead/tin solder nowadays.

it's that horrible 'lead free' stuff.

i'm not saying it's crap, but it's worth noting that within a year of RoHS passing in the EU, every portion of the electronics industry EXCEPT consumer electronics had waivers allowing them to use the good old fashioned stuff.

/got a 1-pound spool in a drawer in my workbench at the office. i figure even as much as i'm using it it should last me years.

fine-gauge stuff, it is.

It is crap, it takes higher heat and is much more brittle than the old lead solder, which leads to a lot more cracked connections that cant easily be repaired by the home diy type (although what percentage of people can actually do that...), so instead of a little bit of lead going in a landfill possibly after 10 years, the devices have to be junked after 5 years creating much more waste in general.
