Anyway, I was also going to say that I don't like this "pure honey" movement. The best honey is like homemade honey, which comes from a variety of different flowers, not just clover or lavender. I guess it's better to keep out things like milkweed and more smelly flowers, but those are usually covered up, and that's why you do sampling.

Also, I've had honey-and-lavender ice cream. It's delicious.
If you live in the DC area, you can try it yourself at Moorenko's. They have 2 stores: one in Takoma Park and one in McLain. The McLain one's bigger and open in winter.
