Very few are properly dry aged for six weeks or more, I guess because it's too expensive to store and hang it all. Took Mr. Co-Pirate to Peter Luger's for our fifth anniversary and the steak was a total revelation.

I agree. I age my own and found that it's a least 35 days to make a difference. Most places I've seen offer a 21 day aged sirloin.

I just recently had a dry aged steak from some place called Uncle Jack's in Manhattan. it was extremely good, better than any steak I've ever had. Especially good since it's the first time I had beef in about a year.

Ahh aged steaks... using natural decomposition to make the steak taste oh so nice... Amazing what a little rotting will do for the steak, taste-wise...

I'd say it's sometimes the best parts of the animal. I've had some good tripe (and some bad tripe) and everyone likes sausage, but for me fatty muscle meat on the bone like pork chops or fish cheeks is preferred.

Well, yeah, but having good versions of the food and bad versions of a food comes with the territory of eating food. However, as far as flavor goes, a well-prepared offal dish will usually have much more flavor than the fatty muscle meat.

Old does not equal good. What typically happens is a decline in quality. They also left their prime spot on the PCH. I have seen many places move and lose their customers.
