when I do this I'll give it a light dust of salt and pepper before covering. and I let it go a little further because I like my yolk just a little runny and mostly set. just enough to mop up with toast.

yes.... big breakfast is my favorite meal to cook. and I covet big breakfast for my days off. Ive been perfecting my poached eggs technique as of late.

glad I could be of service. good luck on your experiments

and by the way, the secret to a good poached egg is a splash of vinegar to the water and a little salt. in a shallow pan ease the egg into the boiling water, in a deep pot stir the water hard to get a good vortex going and drop the egg right in the middle of the cone. you might still need to push the album towards the yoke though.
