I love visiting my cousin in rural Illinois because he always takes me deer hunting. Illinois is teeming with them and we always get like six or seven, though we'll only take the big ones home for preparation. I don't know much about hunting, but it's pretty laid back and fun if you've never tried it. His wife drives the pickup down this long dirt road while my cousin and I sit in lawnchairs in the back. He's got this 200,000 candle spotlight that we use to find the deer in the dark. Once we find one, they usually try to hold real still. I guess they think we can't see them if they don't move, but it makes them easy picking with my cousin's night scoped rifle. I'm not a big hunting proponent or anything, but if you ever have the opportunity, take it because it is fun.

Ha, I just remembered a funny anecdote from hunting with my cousin. He found this female deer with the spotlight and it was in the process of giving birth. The little deer was stuck half way though. When he shot the mom deer, it must have made her clench because the little deer shot out like twenty yards. We were on our way back to his house, so we didn't stop to pick either of them up, and damn, I don't think we could have because we were laughing so hard we almost fell out of the truck.

A friend gave me some venison loin, it's in the freezer-any good, simple, recipes? I like to cook, but some of the venison recipes I've found online call for stuff like juniper berries, chicken livers and other sundry stuff I don't have handy.
In Delaware I've never ever seen any deer-they are hunted very well down there, but for some reason in eastern Pennsylvania is loaded with 'em. Northeast Philadelphia airport has a yearly culling of the herds-donating the venison to local food banks.

My senior year of HS my sister just got her license. She was driving home and a deer hit her. Broke its neck clean and didn't even tear the skin. It had been a pretty sparse hunting year and the Sheriff didn't care what we did with it. It was a fresh kill.

That was the only venison jerky we had that year.

For venison steaks, I use Cabela's Wild Game Rub. It has brown sugar, rosemary, sage, etc in it. I like to put my venison in stew and chili too. I use venison hamburger to make Sloppy Doe and Bleatloaf too.

Make hamburgers.
Make chili.
Make a stew.
It's just meat.

Only difference when making burgers (or anything else on the pan) is you're going to have to add some fat because venison is so lean.

I'm up in Oregon, and I haven't seen any sign of the blacktail deer around here EXCEPT in places that I cannot hunt.

I wouldn't say I-80 anymore due to urban sprawl, but you don't have to go as far as I-74... Route 17 is sufficient. It was a different story 40 years ago, though.

I can sympathize completely. My own yard is crawling with mule deer - including some really nice looking bucks - but all I see in the woods where I could legally shoot them are squirrels.

It makes me want to get a nice quiet bow.

I would. "Downstate" includes just about everything South of 80, West of 39, and North of 176.

Yes, Downstate can include north. Banjos everywhere.

As with any wild game, the meat is lean. What you want to avoid is refrigerating it for too long, and don't ever ever ever put it in the freezer. The cold breaks down the fat fibers faster than room temperature. Try to cook and eat it the same day you've killed it, otherwise just go to the store and buy ground beef.

If they're as close as they look in that pic, a 22LR with subsonic ammo will pierce an eyeball with no problem at that distance.

One of my favorite uses for backstrap is to slice it into about 1/2 inch pieces, mix some seasoning with flour and cover the steaks, then flash fry it in a pan with canola oil. Sometimes I'll pound the steaks before I flour them. [insert beat your meat joke here]

Freeze away, and yes it's tasty in stew. Again, it's just lean meat - 'chicken breast lean' is close enough.

OK, now I understand what I'll be working with this weekend-the protein tables were helpful too. A lean game meat, that can take some aggressive seasoning, sear in butter, on both sides-don't over cook, and perhaps de-glaze the pan with a bit of brandy?

There is a Central Illinois, home of ADM. Industrial farms. There are a few places that are outside of usual consciousness, the sand prairie along Route 1, that protuberance out west that usdta be called 'Forgottonia.' I think the real SI is south of 13, though there are pockets of red-neck throughout the state, including the classical chicken-market in Uptown Chicago, over by the (Truman) city college.
