When I was young, our family was on good terms with the local veterinarian (the kind that worked with farm animals, not household pets--this was out in the countryside.) Needless to say whenever the season came around for turning that year's little bulls into little steers and little rams into little wethers (there's a term for it, yes) we could every now and then get a supply of the, er, Theme Ingredient. They're quite good breaded and pan-fried in butter.
