TFer vicejay and I are starting to get things together for the spring Fark get-together. We're wanting to do a crawfish boil on a weekend afternoon, since all our previous drinking nights preclude folks with small kids and limited sitter access. That said, we need suggestions from folks who would like to come.

- Date/time? April would probably be nice weather-wise, but I'm only available on the weekends of the 10-11 and 24-25 of April. Either of those weekends work?

- Location? Never done this in the city, so I'm all ears... Nabb1 had brought up Audubon Park a while back, but their shelters are frickin expensive to rent (cheapest is $125/day at St. Charles and Walnut). Are there any free areas to set up something like this?

- Who's bringing what? I have no boiling gear, but our Thibodaux crawfish are 10 times better than that shiat you guys get in NOLA. I could bring a sack of mudbugs, someone else being the burner and pot, a few folks could split the fixins (taters, corn, mushrooms, andouille, seafood boil, Tony's, condiments, etc.), someone else bring the propane bottle, and everyone else bring beer. Lots of beer. No....MOAR BEER!!! If you're bringing the kids (like I am), bring your own non-alcoholic beverages, though.

Thoughts?

I could be there the 10th or 11th of april, but after that it's Jazzfest, and my job keeps me there. I'd be more than happy to bring beer and potato salad (also cokes and water)

JazzFest starts on 4/23 and goes through May 2. Headliners include Pearl Jam, Simon and Garfunkel, Aretha Franklin, Widespread Panic, and the Allman Brothers Band, along with the usual NOLA locals.

I'll be in NOLA May 7-9 for a wedding.
Crawfish and I are good friends.

Having lived in both Houston and New Orleans, I can safely say that the summers in Houston are worse than the summer in NOLA.

I keep both Tabasco and Crystal stocked.

And I have been to Avery Isaland.

Did you know that Katrina destroyed Crystal's Metairie plant, so Tabasco let them use their Avery facilities to produce Crystal?

Two totally different flavors. Just from memory, I have a bottle of Crystal, a few different flavors of Tabasco, LA Hot Sauce, LA Wing Sauce, Sriracha, and a few no-name bottles of hot sauce. They're all good, but on different things. Crystal or LA is perfect on a po-boy, but Tabasco is best for etoufee or bisque.

I like tabasco on my eggs, and a lot of other stuff. LA hot sauce i've never cared for, smells too much like venegar for me, same with alot of the others. Sriracha, i tend to have when I'm eating pho.

and now i wish I worked closer to Calliopes Po Boys near dowtown, man those are good.

I do not discriminate between hot sauces. Like neaux said, different sauces for different foods. Here's a recipe using Crystal:

2lbs Grouper filets
1 bottle Crystal Hot Sauce
1 stick melted butter
Juice of 3-4 limes
s&p

Place fish in a glass dish, cover with the next 3 ingredients. Add a pinch or two of salt and some fresh cracked pepper. Marinate no more than 30 minutes. Throw on a hot grill. Enjoy.

Crystal > Tabasco.

I'm interested in attending. Sadly I've no boiling equipment of my own but I can definitely bring a sack or two of potatoes and hand wipes, so long as I know the date far enough in advance to take off of work if need be.

My jealousy borders on hate.

Can't get po-boy bread up here. Occasionally I get excited when you see a po-boy advertised at a restaurant, but I am always disappoint at the hard baguette and the less-than-fresh seafood with a dash of cayenne that makes it "cajun."

I have learned to never order a po-boy outside of Louisiana. I fair slightly better with a few other cajun or creole dishes, but it's rare.

Seriously motherfarkers? How hard is it to make a po-boy? Any old

I've no idea, honestly. You could try City Park, maybe... I'm not sure if their picnic shelters have reopened since Katrina, though.

We did a crawfish boil at Pontiff Park a few years ago. Not sure how much it cost.

Oh, and I forgot to add:

Crystal is my preference for anything seafood, Louisiana is my stand-by hot sauce, and Tabasco garlic for pizza and they have a soy sauce that totally freaking rocks on sushi. But, they all bow down to... THE ROOSTER
