Have you ever wrapped nice big scallops in bacon and cooked them over a charcoal fire? That's pretty epic food. Though jumbo shrimp are probably a bit better. Anyway, I'd say that they're at the "efficient" stage. Scallop bacon.

Title had me ready for a run to the grocery store...article not so much.

Actually I am glad to see this finally happenning. I think they will fine most of the difficulty will be in the natural growth that comes from working muscles and how fat spreads in an animal as it lives its normal life. Ironically I think they will have to excersize their lab-bacon to achieve much of the natural consistancy.

The texture of a raw or barely-seared scallop is a sublime thing.

Lab-grown pork would likely be trichonella-free and could potentially be quite tasty.

The combination of risk-free pork with scallop texture could be the world's greatest piece of sashimi.

Certain Wegmans stores have a "pick your own hot food" sort of market in their store, where you put food in a box and the price is according to weight. Sometimes, the Chinese section has bacon-wrapped scallops.

Since the price of the food is by weight, not what you get, you can get those for about $7.00 a pound and not have to worry about cooking them. Just a little bit of baking if you're having it later, just to warm it up.

I imagine that if they do figure this out properly and it's good enough that the die-hard meat eaters like it fine, we can all be a planet of happy omnivores with better things to fight about. First it takes animal suffering out of the equation. Then, they can figure out how to make meat healthier as the article suggests by replacing one type of fat for another during the grow. After that you've got pretty much no reason to stick to just veggies.

I read about this before. I'm still unenthusiastic until they get it working. I thought it might be something about them getting it right, but clearly it is not.
Regardless, I hope we harvest and store some panda stem cells so that I can have my panda-burgers in the future.
