They did this all the time on the original Iron Chef. I remember an abalone battle (listed as critically endangered since 2001) and one battle where someone used a threatened species of lobster just to infuse his rice. Used like $1000 worth & then just threw it away.

/Original Iron Chef is irresponsible but totally awesome.

Did anyone else puzzle over the headline in TFA?

To paraphrase, it said "blah blah blah chefs were instructed to prepare a dish featuring an endangered species."

Now, after reading the article, I understand that what happened was that the chefs were instructed to use eel, which turned out to be endangered. But there's a broad difference between "Here, make a dish out of this eel." (which they probably didn't know was critically endangered) and "Hey, choose an endangered species and cook something out of it.", which was how I originally took the headline.

Whilst the eel is endangered in the wild, farmed eels are in plentiful supply, and much cheaper to get than any "wild-caught" one would be. While I understand the concerns of the conservationists, a more appropriate respose would be to stress the importance of obtaining your supplies from reputable farms.

If the eel becomes more popular in restaurants, farming of the species will increase, which also makes stock available for release into the wild.

There is more than one kind of eel. The article is about the European eel (Anguilla anguilla).
