I'll never stop sharing this

Artichoke cheese dip

Can artichokes, quatered
Cup Mayo
Can Old El Paso green chilis
Bag of parm cheese

Chop artichokes, mix with above (spare a handful of cheese) Put in bake worthy bowl. Top with what's left of the cheese action, pop in oven at 375 for 20 minutes

Oh yes, you'll thank me

When I had it it was served with Wheat thins. I think I'd like it better with sourdough bits of bread

Cook, mix, stir.

One thing to add a little something new to mashed potatoes: garlic, roasted if possible, and shredded fresh basil. Add the roasted garlic when mixing or just buy some flavored olive oil. Add the basil just before you add the cream or milk or sour cream so it can mix in with everything.

cheesy bacon dip

1 package soften cream cheese
8 os shredded cheddar cheese
1 container french onion dip
1 jar of real bacon bits

blend together in corningware bowl or other oven safe dish

bake at 375 until bubbly goodness occurs (usually 45 minutes or so)

serve with crackers

One of my patients today told me an easy way to get chocolate covered pretzels.

Put pretzels on cookie sheet. Put a hershey's hug in the middle. Melt in oven for 5 minutes. Put m&m in the middle, cool in fridge.

Nothing fancy. Simple enough for me to do!

...theoretically

Mashed Sweet Potatoes

2 lbs of Sweet Potatoes cut into quarters lengthwise and then into 1/2 inch cubes

1 stick of butter (or less depending on preference)

Melt the stick of butter over low heat. Add sweet potatoes and cover. Cook for 3 hours and then mash them. You lose none of the flavor due to boiling.

2 big cans of refried beans
package of cream cheese
package of shredded cheese
green onions
taco seasoning
sour cream

chop up the green onions and mix with everything else and bake at 350 for 20 minutes (I think)

thats it.

Damn good if you ask me.

Cream cheese
black beans
rotel
shredded cheese or your choice

Layer in a bakeable caserole dish in that order starting with cream cheese. Make sure to thoroughly drained beans. Bake at 350 for around 10 minutes or until shredded cheese is melted.

Use Frito scoops to dip.

I dont have one of my own but I always find a recipie for cranberry chutney, warm up said chutney imedietly before serving, then pour on a nice soft brie. The result should be a sweet/bitter/cheesy mush of holiday goodness. I recomend making naan for a conveance method, but that can be time consumming, so triscuits work just as well.

HOLIDAY RIB ROAST OF BEEF

The whole standing rib roast (Prime Rib) is made up of ribs 6 12. A full 7 bone prime rib weighs about 16 20 pounds. The best portion (known as the small end of ribs) is ribs 10 12, towards the back of the rib section. This roast will weigh 6 or 7 pounds, and can be divided as needed. Have your butcher remove the chine bone. Prepare the roast by removing the external cap of fat and gristle, trim the under layer of fat to about inch.

1 3 bone Standing rib roast
1 T Dried thyme
4 Clove Garlic
1 T Kosher salt
1 t Freshly ground black pepper (or more to taste)

Crush together all seasonings.
Rub seasonings all over the roast, including any space between the meat and bone.
Let the roast sit at room temperature for at least 2 hours.
Preheat the oven to 500.
Place the roast bone side down on a rack in a shallow roasting pan and cook for 15 minutes. Without opening the oven, reduce the heat to 350 and cook for 45 minutes more.
Check the internal temperature of the roast. You want 115 for mostly rare, 120 - 125 for medium.
Remove the roast from the oven, tent with foil, and let sit for at least 20 minutes. The roast will continue to cook, and the juices will be retained for a more succulent dish.
Cut along the bones to separate into a roast and a rib section, slice the roast and divide the ribs.

Serve with Yorkshire Pudding, Peas, Glazed Carrots, Potatoes and Onions roasted alongside the meat, Gravy, and Hot Rolls.

My Thai Turkey Thingy

Great for leftovers.

Leftover boned turkey
Coconut milk
Green curry paste
Couple diced serranos
Some fish sauce

(all to taste)

Slice up the leftover turkey in thin strips (use your own judgement as to what you like) while simmering the coconut milk and curry paste (enought to mostly cover the turkey pieces when you put them in). When it's warmed up and you get a light oily film on top of the coconut milkiness put in the meat pieces and the peppers and fishy sauce and add more coconut milk until everything is immersed. Use your judgement be your guide as to levels of sauces and spices. People are too variable in tastes to always do it the same for everyone. Let it cook on medium about 5 minutes, just get everything warmed up nice and let the spices mingle. Sometimes I put in some garlic and black pepper too. Then pour it over rice.

Anyone have any halfway healthy recipes?

2005-12-23 08:16:58 AM
This is somewhat a healthy and easy recipe:

1 container of fat free strawberry cream cheese
1 large container of marshmallow cream (which is also fat free)
Your favorite fruits

Mix together the strawberry cream cheese and marshmallow cream, cut in dip your fruit into it. It does have a lot of sugar, but no so artery hardening.

Stuffed Mushroom Caps

Bag of Spinach
As many mushrooms as you want caps
Clove of Garlic
Grated parmesan cheese
Shredded Mozzerella
Ricotta cheese

Core the mushrooms (pull out the stems) and dice the stems. Set aside caps for now.

Smash and sautee the garlic in canola oil in a nonstick pan and throw in the diced stems and the spinach. Sautee until the spinach shrinks significantly (and it will) and toss the goods in a large bowl.

Put a couple of large spoons (I use a serving spoon) of ricotta cheese and a generous portion of the parmesan in the bowl. Mix it all up until it's spread througout and set aside.

Now sautee the caps until lightly browned and put them on a cookie sheet lined with foil (hopefully nonstick foil). Stuff the caps with the mixture, then drizzle the mozzerella all over the caps. Pop 'em in the oven at 350 (you can do 400 as well, the cheese will get browner) for about 10-15 minutes or until the cheese is brown enough for you.

This is a good Atkin's/South Beach recipe as well, but goes over great on holidays too.

If the fried druit gets struck in the beaters, pry it loose with
a drewscriver. Sample the whiskey and check it again for tonsistency.

Next, sift two cups of salt. Or something. Who cares???
Check the whiskey again.
Now sift the nutmeg and strain your nuts. Add one table.
And the spoon. Of whiskee. Or something. Whatever you find left.
Grease the oven.
Turn the crake pan to 350 degrees. Don't forget to beat off the turner.
Pour the oven into the batter. Throw the bowl out the window.
Lick the batter off the floor.
Bake 300 minutes at 50 degrees.
