If it was like he said and he knew nothing about it, there's a chance the manifest would show the weight with the pot added in. Also, lots of those weigh stations are now just weigh-in-motion, and I'm fairly sure the driver doesn't actually see anything about the load weight, just if he is allowed to proceed or not.

It would be easy to hide 800lbs of anything in a 53' refrigerated trailer. If it's a tri-axle, the capacity is somewhere in the region of 50,000lbs, and that's just the freight, not counting the weight of the can, the reefer unit, and the fuel to run it.
