The really awesome thing about science... is that when they do figure out just what exactly causes things to behave differently than the equations would anticipate (that which is currently being attributed to "dark matter"), they will revise their equations, revise their hypothesis, and ultimately build a body of theories to better explain the universe.
They won't cling to dark matter once they know what is actually out there causing emmissions from galactic cores... unless... of course... it actually is dark matter.
This dark matter and dark energy business are getting awfully close to "The sun is the chariot wheel of Apollo".

Hey we keep seeing this same anomoly in calculations involving XYZ... each time it is the same number by a factor of Y... I wonder what it is? The fact it keeps showing up and in the same proportions seems to indicate it is a substance with a quality proportional to Y.
Go look up the Oil Drop test and how scientists managed to figure out the mass of an electron. It's the same sort of inductive reasoning, and not nearly as mystical as you're making it out to be.
Dark Matter isn't "magic". What's so hard to understand about the idea that there's matter out there that we can't see with our current technology? Our instruments aren't that good, and we're only able to see something if it either gives off energy itself, or blocks energy coming from something else.

I wonder if the "vacuum" of space really is a vacuum... They should do an experiment where they can see if a vacuum can cause this "gravitational lensing". Maybe dark matter lies in the vacuum?
