Last year a restaurant in Chicago (Osteria via Stato, if anyone cares) rolled out a bacon martini. Bacon-infused vodka, maple syrup, lime juice, and a crisped pancetta round for garnish. I thought I'd have one just to say I did, and wound up having multiples, they were that good.

The bartender said the hardest part was figuring out how long to let the bacon sit in the vodka. They arrived at 72 hours as the best balance between flavor and fat. So, yes, bacon vodka can be damned good.
