Eggs, cheddar cheese, black beans, spinach, sausage. I usually cook down the spinach first to get rid of excess water. Once cooked, top with shredded cheddar and broil in oven until cheese is slightly browned.

Doesn't matter what you put in it... that's up to you. Just put in some curry powder and parmesan cheese into the eggs and make sure to beat them up a lot to get air into them.

Hmm. It's hard to choose, since omelettes tend to be eggs-n-leftovers in my house - and always delicious. If I HAD to choose, though, it'd be a toss-up:

1 - bacon, cheddar cheese, leftover caremelized onions, leftover mushrooms

2 - cream cheese, smoked salmon, minced shallots

3 - corned beef (or pastrami), swiss cheese

1 cup homemade chili
1/3 cup shredded sharp cheddar

beat eggs and milk well, pour into hot skillet. cover briefly and allow to set. uncover, pour 3/4 cup of the hot chili in a line down the middle of the eggs. sprinkle most of the cheese across top of chili, replace lid for 2 minutes. fold sides of eggs over the strip of chili/cheese, pour rest of chili across the top of the omelet and sprinkle with remaining cheese

Or you can always make an egg puff instead...

Use 5-6 large eggs, separate the whites and the yolks, whip the whites into a big froth, then gently fold the yolks back in. Pour it into a pre-greased deep cast-iron skillet and sprinkle cheese, mushrooms, asparagus, bacon, pretty much anything handy and bake at 375F.


Mo betta than omlettes.

I have done the salmon, cream cheese, but I added in tomato and capers. (the Lox omelet)

However my favorite was leftover lobster tail, alfredo sauce, and provolone.

Okay, in all seriousness, I'm not into omlettes nearly as much as my husband is, but I do know how to cook them, and on the rare occasions when I do want to have one of my own, it's a weensy one-egger with three cheese on top, and cream cheese in the middle.

It may *sound* boring... well, because it is.

But it's not bad.

Make an omelette with mushrooms in it. Remove omelette, smear with cream cheese and put a layer of cooked spinach on it. Fold in half. Yum!

Don't overcook. Your omelet is done when it looks slightly underdone. The heat in the egg continues to cook it for a very short time after you put it from pan to plate. If you cook it until it looks 100% done and firm, it will instead end up dry and/or rubbery. Bad times.

Same applies to scrambled eggs. They're done when they look the tiniest bit runny. Put em on a plate, 30 seconds later they are perfect.

this is my "awesome omelette" recipe:

fry up potatoes, onions and mushrooms until they're cooked, then add a bunch of eggs. toss in diced tomatoes and avocado at the end. salt & pepper to taste. a little sweet potato is great in there too, but don't overdo it; do about 25% sweet potato to 75% white potato and you'll be good.

must be cooked in an iron skillet, over a campfire. farm fresh eggs are best to use, if you can find them (if you're camping in the boonies, the local markets will always have some).

great for a hangover!

I grew up in Lafayette, La which is just down the road from Abbeville, la. I have no idea how Abbeville ended up hosting an omelette festival. They are better known for their seafood and oyster dives.

we used to drive 40 minutes down there just to wait in a one hour line to eat boiled crawfish and raw oysters. Our beer tab was 30 bucks before we even got seated.

Fairly standard, but it's delicious.

I looked for one in the kitchen supply section of a Linens & Things the other day...not a single cast iron item.

Help me obi-Farkers, you're my only hope!

/ by the way, mix your eggs with a couple tablespoons of cold water and cook over LOW-Medium-low heat. They'll be infinitely fluffier than over high heat.

Spanish omelets are good, avocado, salsa onions. Denver omelets are good, gp, o, ham. Mushroom swiss are good, esp. w/ rye toast. The Tampopo is surprisingly good, day-old rice, hot dog slices, catsup.

The pan must be pre-heated, butter should be just burning in the pan. Successive omelets are better, so invite friends over on Saturday morning. Mix up a couple eggs with a quarter eggshell half of water and a spritz of ground pepper. Try to stir slightly so as not to introduce air nor homogenize the mix, use a horizontally-held fork. Pour into a pan from a slight height. Stir gently. The goal is to have the entire range of degree of cookedness in the omelet. Little bits of egg might bubble up at first, its okay to moosh them down with your fork. Uncooked egg will gather at the top of the eggs, tilt the pan so this stuff touches the bottom of the pan, you can lift the edges with your fork if necessary. Good cooks learn not to use a spatula for this after a while. Heat your serving plates and insert materials so that your omelet can be served hot. Chop your ingreds rather finely so the eater can just use a fork to eat it.

Cast iron - best is to find something older than dirt at a yard sale or flea market. If it isn't properly seasoned or if it has rust, re-season (see the internets for procedure).

If buying new, buy Lodge brand - sold at Wal-mart and other stores. It is made in USA, inexpensive, and works great once it is broken in.

Lodge.

LnT and BB&B used to sell them, but they were replace with Emeril's crap. You can find 'em pretty much anywhere, but in-store selections usually suck. 10inch is a good standard size, and make sure to get the one with the "helper handle" on the front.

and don't mail order... shipping is re-farking-dickulous.

Try WalMart, Dick's (camping section), random large general store type place.
