The Chinese can be very cold, hostile, and uncooperative with those who have insulted them - but they generally don't demand people's heads over such things. If you disrespect their culture, they will simply treat you with the condescension and contempt due any barbarian. They are not the nicest people in the world, but in my view, they are far from being uncivilized - farther than us in some ways. Indeed, when one simply wishes to be treated with courtesy and otherwise left alone, the Chinese are pretty nice to be around, in my experience.

Correct and correct. There's a better standard in Japanese (romaji) simply because its pronunciation is closer to Western languages (or specifically English, in EVERYTHING but the nasal ん or ン). For Chinese, I would personally choose "Mau" since I think there's a greater likelihood that "Mao" could be pronounced incorrectly (specifically as "May-yo").

Yup. Not likely to have efficient tools -- heck, even the more efficient tool, the SPORK -- on hand in mainland China. The "sticks" suck in nearly every application, but they can be learned!

Pick a dialect now, and go with it; I suggest you flip a coin between Cantonese and Mandarin.
